Chocolate Peanut Clusters

60 caramel candies, unwrapped

3 tbsp water

2 (12 oz) pkgs milk or semi sweet chocolate chips

3 cups salted peanuts

Cover three cookie sheets with foil, shiny side exposed. Lightly grease

foil with nonstick cooking spray; set aside.

In a medium non-stick saucepan, over medium heat, melt caramels with

water, stirring often. Once melted, remove from heat and stir in peanuts.

Drop by rounded tablespoonfuls onto prepared cookie sheets. Refrigerate

for 30 minutes or until set.

Melt chocolate in the microwave according to package directions. Chocolate

will begin to reharden as it sits, so you may have to remelt it, in the microwave.

Dip caramel/peanut clusters into melted chocolate and place back on foil lined

cookie sheets. Chill clusters in the refrigerator for 30 minutes. Keep refrigerated

until ready to serve. Makes 3 dozen candies.
