Chocolate Coconut Candy Slabs
2/3 cups miniature semisweet chocolate morsels
2/3 cups toasted flaked coconut
2/3 cups chopped pecans
2/3 cups chopped graham crackers
Line 3 (9x5 inch) loaf pans with plastic wrap; set aside
(press and seal works well)
Combine morsels, coconut, pecans and graham crackers; set aside 1/2 cup
Microwave chocolate morsels in a large microwave-safe bowl at 70% power for 1 minute and 15 seconds. Morsels will not look melted. Stir them until they are melted. Microwave again at 15 second intervals if necessary.
Gently fold in the chocolate, coconut mixture/
Quickly spread melted chocolate evenly in prepared pans. Immediately top this with the reserved 1/2 cup reserved mixture, pressing gently with fingertips. Let stand 1 hour or until firm. Yield 3 slabs/about 2 pounds.
