Chinese Barbecued Pork

1/2 tsp salt

1/4 tsp pepper

1 tsp Chinese Five Spice

5 tbsp chasu sauce

2 tbsp soy sauce

1 clove garlic, crushed

2 tbsp dry sherry

1 lb lean pork

Cooking oil

Day before, prepare marinade: Put salt, pepper, sugar, Five Spice, chasu sauce,

soy sauce, garlic and sherry in a container of an electric blender. Blend on high

speed for a few seconds. Cut pork into 4 lengthwise pieces, cutting with grain

of meat. Arrange pork in shallow dish; cover with marinade. Refrigerate for at least

24 hours. Turn occasionally. Next day, preheat oven to 400 degrees.

Remove pork from marinade; place on a rack in a roasting pan. Brush with

oil and some of the marinade. Roast in a preheated oven for 20 minutes.

Turn temperature to 250 degrees. Turn pork; roast for 40 minutes longer,

brushing occasionally with oil and marinade. Placde pork under broiler for

a few minutes to add crispness and to aid browning.

To serve pork, cut across grain into 1/4 inch slices.
