Chicken Maryland
1 3 lb chicken cut into serving pieces
3 tbsp butter, margarine or oil, for frying
4 tbsp all purpose flour
3/4 tsp salt
Dash paprika
Dash pepper
1 egg
2 tbsp milk
1/3 cup bread crumbs
In a plastic bag, combine flour, salt, pepper and paprika. Add chicken pieces, Shake bag until chicken is coated.
Beat egg with milk. Dip chicken pieces in mixture. Then dip chicken in bread crumbs. Set aside. In a skillet, heat butter until
brown or oil until it reaches 375 degrees. Add chicken a few pieces at a time. Fry over medium heat until chicken is crispy,
brown and tender. When frying in oil, it takes about 15 minutes. If frying in butter, 20-25 minutes. Turn pieces over for
even browning. Check for doneness. Keep warm. For sauce, melt butter in a saucepan. Add pepper, Saute for a few minutes.
Sprinkle with flour. Stir to combine. Add milk or half and half, a little at a time, until well blended. Bring to a boil.
Cook for 3-5 minutes, stirring. Season to taste. Place hot chicken on a serving place. Serve sauce alongside.
Note: You can also reduce the fat by replacing butter or margarine a low or no fat substitute and by using skim milk.
