Chicken Cacciatore
1/4 lb mushrooms, sliced
1/2 green bell pepper, finely diced
1 onion, thinly sliced
1 clove garlic, minced
4 chicken pieces
1 cup peeled and chopped tomatoes
1/4 tsp dried basil
1/4 tsp dried oregano
1/8 tsp pepper
1/4 cup red wine
4 oz linguini
In a nonstick skillet, saute mushrooms, pepper, onion and garlic until limp, stirring constantly.
Add chicken pieces, tomatoes, basil, oregano, pepper and wine. Cover and cook over low heat
for 35 minutes, or until chicken is tender. Meanwhile gradually add the linguini to rapidly boiling water.
Drain cooked linguini in a colander, Serve linguini tipped with chicken and sauce. Makes 2 servings.
Note: reduce the the calories in this already low calorie dish, by using whole wheat pasta.
