Chicken and Feta Bites
Dip
1 cup plain yogurt or sour cream
1 1/2 tsp grated lemon peel
1/2 tsp garlic pepper seasoning
1/4 tsp sugar
1/8 tsp salt
1 small clove garlic, minced
Chicken and Feta Bites
1 cup chopped leftover or rotisserie chicken
1/2 cup frozen spinach, thawed and pressed to remove liquid
1/2 cup crumbled tomato basil feat cheese
2 tbsp mayonnaise
1 tbsp onion, finely chopped
1/8 tsp oregano
2 (8 oz) cans flaky butter crescent style rolls
Blend all dip ingredients in a medium bowl. Cover and keep chilled.
Preheat oven to 375 degrees. Blend chicken, spinach, feta cheese, onion,
mayonnaise, and oregano in a medium bowl. Unroll the dough; separate into
4 rectangles. Press each into a 4"x5" rectangle, firmly pressing perforations
to seal. With a sharp knife, cut each rectangle into 4 squares. Spoon 2 tsp
of chicken mixture onto center of each square.
Pinch ends together and seal, leaving a 1/2 to 3/4 inch opening at the top
of each bite. Place on ungreased baking sheet. Bake 10 to 15 minutes or
until golden brown. Serve hot with dip. Makes 32 chicken and feta bites.
