Chewy Oatmeal Cookies
3/4 vegetable shortening
3/4 cup (1 1/2 sticks) butter or margarine
1 1/4 cup firmly packed light brown sugar
1 egg
1 1/2 tsp vanilla extract
1 cup all purpose flour
1 cup chopped walnuts
3 cups quick oats
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1 cup raisons
Preheat oven to 375 degrees. Grease baking sheets. Combine shortening, brown sugar, egg, milk and vanilla
a large bowl. Beat at medium speed of electric mixer until well blended. Combine oats, flour, baking soda,
salt and cinnamon. Mix into creamed mixture at low speed just until blended. Stir in raisins and nuts.
Drop rounded tablespoonfuls of dough 2 inches apart onto baking sheet. Bake one baking sheet at a time
for 10-12 minutes or until lightly browned. Cool two minutes. Remove cookies to sheet of foil on counter.
Note: reduce the sugar in these cookies by substituting Splenda brand sugar substitute cup for cup.
