Cheesy Smashed Potatoes

 

5 lbs baby Yukon gold potatoes

1/2 tsp salt

1 cup sour cream

3 cups white cheddar cheese, shredded

1/4 cup chives, finely chopped

1/2 tsp grated nutmeg

1/2 tsp cayenne pepper

Salt and pepper, to taste

 

Wash potatoes, cut in half and place in a large pot. Cover with water and

bring to a boil. Add 1/2 tsp salt. Boil potatoes for 15 minutes, or until tender.

Drain and return potatoes to the hot pot. Smash with masher or large fork,

and combine with sour cream and cheese. When cheese melts into potatoes,

add chives, nutmeg, cayenne, salt and pepper. Re-smash. Yield: 10 cups.
