Cheesy Chicken and Rice Casserole
1 can cream of chicken soup
1 1/3 cups water
3/4 cup uncooked long grain rice
1/2 tsp onion powder
2 cups frozen or fresh vegetables
4 skinless, boneless chicken breast halves
1/2 cup shredded cheddar cheese
Stir soup, water, rice, onion powder and vegetables in a 12x8" shallow baking pan.
Top with chicken. Season chicken with salt and pepper if desired. Cover.
Bake at 375 degrees for 45 minutes, or until chicken and rice is done. Top with cheese.
