Cheese Straws
1/2 pound sharp cheddar cheese, grated
1/2 pound plus two tablespoons butter, softened
2 1/2 cups all-purpose flour
1/2 teaspoon salt
Cayenne pepper
Preheat the oven to 300°. Cream the softened butter. Add the grated cheese,
then the flour and salt. Reduce the amount flour if the mixture seems to dry.
Roll out into a thin dough. Use fork tines to create a ridged texture.
Cut into strips about 1 inch wide and 2 1/2 inches long. Carefully transfer
the straws to cookie sheet. Sprinkle with cayenne pepper. Bake for 20 minutes.
Don't allow to brown. Be generous with the cayenne pepper,
if you like spicy snacks.
