Caramel Apple Sundaes
2 medium Macintosh apples, peeled and cored
1 tabs lemon juice
3 tbsp butter or margarine
1/2 cup firmly packed light brown sugar
1 tsp cinnamon, plus extra for garnish
1/2 tsp grated lemon peel
1 pint vanilla ice cream or frozen yogurt
Cut the apples into quarters, then slice into 2-inch pieces. Place apple slices in a medium bowl; toss with the lemon juice.
In a large skillet, melt butter over medium heat. Add apples; cooking for 2-3 minutes, stirring occasionally.
Reduce heat to low. Add sugar, cinnamon and lemon peel, stirring to evenly coat apples. Simmer for 2-3 minutes longer.
Remove from heat. Allow sauce to cool for about 10 minutes. Divide ice cream into four dessert bowls.
Top with caramel apples. Sprinkle with cinnamon and grated lemon peel and serve.
If you choose to prepare the apples up to three days ahead of time, store them in the refrigerator, tightly covered.
Reheat in saucepan or microwave before serving.
Note:Create a low carb recipe by using Splenda brand brown sugar substitute, cup for cup, and by using sugar free vanilla ice cream.
You can reduce the fat in the recipe by using low fat vanilla ice cream.
