Caribou Chili
1 cup red chili beans
3 cups water
1 large onion, sliced
1 chopped green pepper
1 lb caribouburger
3 tbsp bacon grease
1 large can tomatoes (3 1/2 cups)
1 1/2 tsp salt
1/8 tsp paprika
1/8 tsp cayenne pepper
1 bay leaf
2 tbsp chili powder
Put chili beans in a large sauce pan. Soak overnight. Drain. Cover again
with water and simmer until tender. Meanwhile, brown caribouburger,
onion and green pepper in bacon fat. Add to beans along with all of the
seasonings. Cook for an additional 45 minutes. Stir frequently.
