Caramelized Onion Pot Roast
1 boneless beef chuck roast ( 4 lbs )
1 tbsp olive oil or vegetable oil
1 1/2 cups beef broth
6 medium onions sliced
1 tsp salt
1/2 tsp pepper
3/4 cup regular or nonalcoholic beer
2 tbsp packed brown sugar
3 tbsp Dijon mustard
2 tbsp cider vinegar
Spray a 12 inch skillet with cooking spray. Heat over medium high heat. In the
skillet, cook beef about 10 minutes. Turn occasionally, until brown. Sprinkle with salt,
and pepper; remove from heat.
Spray a 4-5 quart slow cooker with cooking spray. Place onions in cooker. Place
beef on onions. In a mixing bowl, combine rest of ingredients, pour over beef.
Cover; cook on Low heat setting 8-10 hours.
Remove beef from cooker; cover and let stand 15 minutes. Slice beef; serve beef juice and
onions from cooker.
The beef should be so tender, you could use two forks to break it apart, rather than trying
to slice it.
