Caper Sauce
1 tsp dry mustard
1 tsp sugar
1/2 tsp salt
2 unbeaten egg yolks
1/2 cup salad oil
3 tbsp lemon juice
3 tbsp coarsely chopped capers
2 tsp finely chopped pimiento
1 tsp onion juice
1 tbsp juice from the capers
Add dry mustard, sugar and salt to the egg yolks. Beat together.
Gradually add salad oil, drop by drop; continue to beat until thick
and creamy. Finally beat in lemon juice; chill. Just before serving,
add capers, pimiento, onion juice and juice from the capers.
