Cabbage and Apple Slaw

1 lb shredded cabbage (approx 7 cups)

1/4 cup chopped red onion

2 Granny Smith apples, chopped

1/2 cup chopped walnuts

1/4 cup cider vinegar

1/4 cup apple cider or juice

1 1/2 tsp honey

1 tbsp finely chopped fresh parsley

In a large bowl, combine first 4 ingredients. In a small bowl,

whisk together the vinegar, cider and honey. Add salt and pepper

to taste. Toss dressing with vegetables and fruit. Sprinkle with

parsley. Chill until ready to serve.
