Brunch Casserole

1 lb spicy pork sausage

1/2 cup chopped green bell peppers

1/2 cup chopped red bell peppers

3 cups frozen hash brown potatoes, thawed

12 eggs lightly beaten

1 1/2 cup milk

1/2 tsp salt

1 cup shredded Cheddar cheese

Preheat oven to 350 degrees. Lightly coat a 3 quart baking dish with nonstick cooking spray. Set aside.

In a medium skillet, over medium heat, cook and stir sausage until it browns and crumbles; drain off fat. Add green and red pepper to skillet; cook and stir 5 minutes more or until peppers are tender.

Place hash browns in the baking dish Top with cooked sausage mixture. Whisk together eggs, milk and salt in large bow until blended; pour egg mixture over sausage and hash browns.

Top with cheese. cover; bake 1 hour or until set and golden.

To shorten the preparation time, cook the sausage and peppers the day before.
