Broiled Parmesan Potatoes
Thinly slice the potatoes so they cook tender without burning.
2 tbsp butter, melted
1 tsp dried basil
1/2 tsp paprika
1/4 tsp garlic powder
1/8 tsp pepper
2 medium potatoes, bias sliced 1/4 inch thick
1/4 cup grated Parmesan or Romano cheese
Stir together butter, basil, paprika, garlic powder, and pepper.
Place potato slices in a single layer on the unheated rack of a broiler pan.
Brush butter mixture over both sides of the potato slices. Broil about 5
inches from the heat for 8--9 minutes, or until the potatoes
begin to brown. Using a wide spatula,k turn potatoes. Sprinkle with cheese.
Broil for 4-6 minutes more to until potatoes are tender. Makes 4 servings.
