Breakfast Sausage

50 pounds caribou, moose or deer meat

10 pounds suet

1/3 cup ground pepper

1 cup salt

2 oz oregano

2 1/2 oz bottle garlic puree

Run meat and suet through a meat grinder, using a large blade.

Run through again, using a small blade. Add seasonings, mix well and run

through grinder for a third time, using the small blade. Wrap in 1-2 pound

packages and freeze. This is delicious with eggs for breakfast, as a main

course for dinner, or made into small balls and fried for hors d'oeuvres.
