Blueberry Muffins
1 1/4 cups sugar
1/2 cup butter
2 eggs
1/2 cup milk
3 Tbsp sugar
2 cups all purpose flour
2 tsp baking powder
1 1 tsp salt
2 cups blueberries
Cream margarine and sugar until fluffy. Add eggs, one at a time. Add
dry ingredients, mixing with milk alternately. Wash blueberries and pat
dry. Sprinkle berries with a little flour, so they don't sink to the bottom of
batter. Fold in berries. Grease muffin tins generously and then flour them.
Fill 3/4 full. Sprinkle tops of muffins with sugar. Bake in a 375 degree oven
for 30 minutes.
