Blueberry Cobbler
3 cups fresh blueberries
1/2 stick butter for dotting
2 tsp lemon juice
1/2 tsp vanilla extract
1 1/2 cups biscuit baking mix
3/4 cup sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Preheat oven to 350F In a large bowl, toss together the blueberries, lemon juice, and vanilla.
Spon the mixture into a buttered 8" baking pan. In a medium bowl, combine the biscuit mix,
sugar, cinnamon, nutmeg. Sprinkle over the buleberry mixture, then dot with butter. Bake
40-45 minutes, or until crispy.
Note: This would be equally delicious with blackberries, strawberries or raspberries.
For a healthier dish, use Splenda sugar substitute, cup for cup.
