Beef Kabobs with Garlic and Pepper
MARINADE
1/4 cup butter or margarine
1/3 cup lemon juice
1 tbsp sugar
1 tsp dried thyme leaves
3/4 tsp salt
1/4 tsp dried oregano leaves
1/4 tsp pepper
2 tbsp finely chopped onion
1/2 tsp finely chopped fresh garlic
1 tsp hot pepper sauce
1 1/2 cups semisweet chocolate chips melted
KABOBS
1 lb sirloin beef roast or lamb
cut into about 32 1 inch pieces
8 small mushrooms
8 cherry tomatoes
1 small green or red pepper
cut into chunks
1 small summer squash, cut into 8 chunks
1 medium onion, cut into 8 wedges
8 metal (12 inch) skewers
In a 2 quart sauce pan combine all marinade ingredients. Cook over medium heat, stirring occasionally, until butter melts and mixture comes to a full boil, remove from heat. Let cool 5 minutes. Stir in sirloin pieces; marinate 15 minutes. To assemble kabobs on metal skewers, alternately thread sirloin, mushrooms, cherry tomatoes, green pepper, summer squash and onion. Brush kabobs with marinade. Place kabobs on got grill over a drip pan. Grill, turning and brushing occasionally with marinade, until sirloin is desired doneness. ( 10-15 mantises). Yield 4 servings
This naturally low carb recipe can be made even lower in carboyhdrates, by using Splenda brand sugar substitute instead of granulated sugar.
