Baked Stuffed Jumbo Shrimp

7 jumbo shrimp

1/2 stick of butter (more or less to taste)

1/2 cup Italian flavored bread crumbs

1/2 cup crumbled Ritz crackers

1 tsp garlic powder

1 tsp dry parsley

1 pinch pepper

1 tbsp lemon juice

Devein shrimp, leave on tails. Slit shrimp down the middle, about 1/4 inch

deep for stuffing. Melt butter. Place remaining ingredients in bowl and pour

in butter. Mix thoroughly. Stuff shrimp. Place in a buttered casserole dish.

Bake in preheated 400 degree oven for 18-20 minutes.
