Baked Scallops

2 cups scallops, parboiled

1 cup chopped mushrooms

2 tbsp chopped onion

1 cup cream

1/2 cup scallop liquid

4 tbsp flour

4 tbsp butter

Salt, black and red pepper

1/3 cup bread crumbs

Parboil scallops and cut in halves. Melt butter in a saucepan and then add flour, stirring

until flour is absorbed in the butter. Add onions and mushroom and cook 5 minutes.

Add scallop liquor, cream and seasonings. Cook until thick, stirring constantly. Add

scallops and put in buttered baking dish. Dot with butter. Cover with bread crumbs

and bake until brown.
