Baked Salmon with Herbed Cream Sauce

My Aunt Theresa passed away many years ago. This was one
of her favorite dishes. I miss making it for her.

4 (5oz) pieces boneless salmon fillet

1/2 cup vegetable oil

2 tsp seasonings salt

1 cup white wine

1 tbsp lemon juice

1 cup heavy cream

1 tbsp chopped chives and parsley

1/2 stick butter

1 tbsp finely chopped onion

1 tsp chopped garlic

1 shot brandy
(I buy the tiny plastic bottle)

Season the salmon fillet and place in a baking pan with the vegetable oil.

Marinate for 20 minutes on each side. Pour the wine and lemon juice on top

and bake in preheated 350 degree oven for 15 minutes. Remove fillets, set aside,

keep warm. In a heavy saucepan, melt butter. Saute onions, add chives and parsley,

the remaining juices from the baking pan, garlic and brandy. Add the heavy cream.

Cook until the sauce is reduced to a light creamy consistency. To serve, place one half

ounces of sauce on the bottom of a plate. Add the salmon fillet on top of the sauce,

showing some of the sauce. This is a low carb lover's delight!!
