Baked Cod with Herbed Crumb Topping
1 tbsp dijon style mustard
1Tbsp lemon juice
4 cod fillets ( 5 or 6 ounces each)
1 cup fresh dry bread crumbs
2 tbsp chopped parsley
1 tbsp finely cut chives or green onions
1 1/2 tsp chopped fresh rosemary or 1/2 tsp dried rosemary
1 tbsp olive oil
Preheat oven to 400 degrees. Lightly grease baking pan. Stir together
mustard and 1/4 tsp lemon juice in a small bow. Spread mustard mixture
over tops of fish fillets. Mix together crumbs, herbs and remaining lemon
juice in a bowl. Press mixture firmly into mustard covered tops of fillets.
Transfer to prepared baking dish. Bake in preheated oven about 17 minutes
or until fish tops are lightly browned and fish is flaky.
