Baked Apples

 

4 Fuji or MacIntosh apples

2 tsp lemon juice

6 tsp golden raisins

4 tsp brown sugar

2 tsp ground cinnamon

Vanilla extract

1/2 cup rum or sherry (optional
you may use apple juice instead

Light whipped cream or light vanilla ice cream or soy ice cream

Preheat oven to 350 degrees. Core each apple but do not cut through, so that the bottom remains intact.

Remove 1/2 inch of the peel at the top of the apple.

Place apples in a baking dish and sprinkle with the lemon juice. Fill centers with raisins and brown sugar. Drizzle with vanilla extract and sprinkle with cinnamon.

Pour rum, sherry or apple juice into bottom of the baking dish. Bake for 30-35 minutes, the top with light whipped cream or light ice or soy ice cream.
