Apricot Glazed Pork Roast and Stuffing

 

4 cups herb seasoned stuffing cubes

3/4 cup chicken broth

1/2 cup dried apricots, chopped

1/3 cup frozen chopped onions

1 (2- 2 1/2 lb) pork loin roast, trimmed of fat

1/3 cup apricot jam

1 tbsp balsamic vinegar

Spray a 4-5 quart slow cooker with cooking spray. Mix stuffing, broth, apricots and onions.

Place pork on stuffing mixture. In a small bowl, mix jam and vinegar. Spread over pork.

Cover; cook on Low heat setting 7-8 hours.

Remove pork from cooker; slice on a cutting board. Stir stuffing before serving. Cut

pork into slices; serve with stuffing.

 

white or cider vinegar can be substituted for the balsamic. Peach jam works as well as

apricot.
