Apricot Glazed Halibut
4 (6 oz) halibut fillets
1 (8 OZ) jar apricot preserves
2 cloves garlic, minced
2 tbsp grated orange peel
2 tbsp chopped fresh rosemary
1/4 tsp salt
1/4 tsp freshly ground pepper
Preheat oven to 350 degrees. Lightly coat shallow baking
dish with nonstick cooking spray. Place fillets in baking dish;
set aside. In a small saucepan over medium high heat, stir
together apricot preserves, garlic, orange peel, rosemary, salt
and pepper until heated. Pour over halibut. Bake for 15 minutes
or until fish flakes with a fork. Serves 4
