Angel Food Cake

Before starting to make an angle food cake make sure you are using
a glass or ceramic bowl. A plastic mixing bowl will not work.
You also have to make sure that nothing that comes in contact
with the preparation of the cake has any grease on it.

 

1 cup sifted cake flour

3/4 cup sugar

12 egg whites

1 1/2 tsp cream of tartar

1/4 tsp salt

1 1/2 tsp vanilla

3/4 cup sugar

Sift flour with 3/4 cup sugar four times. Beat egg whites with cream of tartar,

salt and vanilla, until soft peaks form, but still remain moist and glossy.

Add remaining 3/4 cup sugar, 2 tbsp at a time, continuing to beat until meringue

holds stiff peaks. Sift 1/2 cup flour mixture over the whites; fold in. Fold in

remaining flour mixture by fourths. Bake at 375 degrees for 35-40 minutes

in an ungreased 10 inch tube pan or until done.

Invert pan on a 2 quart soda bottle and let cake cool.
