All Time Best Lemon Bars

 

3 eggs

1/3 cup butter or margarine

1 package lemon cake mix

1 cup granulated sugar

2 tsp baking powder

1/4 tsp salt

2 tbsp grated lemon peel

1/4 cup lemon juice

confectioners' sugar if desired

Heat oven to 350 oven degrees. Mix 1 egg, butter and cake mix until crumbly.

Reserve 1 cup of this mixture. Pat remaining mixture lightly into an ungreased

13" x 9" baking pan. Bake 12-15 minutes or until light brown. Beat 2 eggs, granulated sugar,

baking powder, salt, lemon peel and lemon juice with electric mixer until light and foamy.

Pour over hot crust- sprinkle with remaining cake mixture. Bake about 15 minutes or until light brown.

Sprinkle with confectioners' sugar.

These are really delicious. For a lower sugar content replace sugar with

Splenda brand artifical sweetner can be used cup for cup.
